Did you ever have one of those moments where you know you have to clean out the fridge of perishable items because you’ll be out of town for awhile? And the idea of throwing it all in the trash makes you cringe because NOTHING is wrong with this food… Sometimes you just have to think outside the box.
I made these pancakes one day before we left the house for 9 days. The cool thing is, if you don’t have a family to eat a big batch of pancakes, you can still make them and wrap 3 at a time in plastic wrap and freeze them. They make a great 30-second-microwave-breakfast when you don’t have a ton of time.
What I had in the fridge was a big bowl of blueberries and dark chocolate almond milk. They were so yummy. The blueberries popped in your mouth & honestly the chocolate aspect of the almond milk didn’t really bring much to the party, except color. Anyone else may have given up because she didn’t have regular milk. Give it a try! Experiments are fun! And honestly, topping any kind of pancake with homemade maple syrup is a yummy decision.
P.S. If you are feeling super lazy, just throw the washed blueberries in a zip-top bag and put it in the freezer. And the chocolate almond milk? Put it in a sippy cup for the trip.
